June Recipe: Pan con Tomate!

This is a very last minute June recipe because for the majority of the month, I've been traveling through Europe for my very first time! My absolute favorite city was Barcelona, Spain. While we were there, I took inspiration from the many tapas and paellas that we ate. The simplest dish called "pan con tomate" or translated literally as bread with tomato, was actually one of my favorites. One place we went to had an open kitchen, so I saw how simple it was to make. Here is a picture of my inspiration from Barcleona:

First, you simply take some thin, rustic bread and toast it. Here, I used a baguette, and as you can see in the picture, did not do a very even job of cutting it. I put my own little twist on it by adding garlic.

Next, I sprinkled some olive oil on the bread and sliced a tomato in half. With the tomato halves, I just smushed it across the bread. Yes, very technical, I know.

And it was as easy as that! I know that it looks pretty different from the inspiration picture, but the idea is the same, and I still found it to be delicious! And hopefully I'm just warming my way up to making seafood paella.

Stay tuned for what I'm sure is going to be an onslaught of inspiration posts from the various places I visited around Europe!
