October Recipe: Leftover Quinoa and Veggies

Happy October! I had some leftover quinoa from my September recipe, so I decided to do something different with it. At first, I was looking up quinoa salad recipes, but most of them involved cilantro or black beans, both of which I do not particularly like. So instead of finding a recipe to follow as I usually do, I thought I would step out of my comfort zone (a little) and do something else. I figured since quinoa reminds me of rice, I could just do a fried rice but with quinoa instead. I just sauteed some veggies I had in the fridge, threw in some quinoa and sesame oil, and this is what happened!



























In case you can't pick them out, the veggies I have in this dish are: 1/4 onion, 1/2 zucchini, 3-4 baby bella mushrooms, and edamame from 4-5 thawed pods. I also seasoned these with a bit of salt and minced garlic as I usually do with fried rice. 




The result was much better than I expected. I am guilty of loving my white rice and shunning brown rice for the weird texture, but I actually like the texture of quinoa. Plus, it totally worked in this fried rice experiment. Even though I'll play around with some more quinoa recipes, I'll definitely be coming back to this one again in the future!
