August Recipe: Lemon Cookies!

It's summertime despite the crazy thunderstorm that is happening outside at the moment. I guess it's normal for it to rain during the summer in most places, but I'm a California girl at heart, so it is still quite shocking to me. The upside of rain is that I can actually do things like turn on my oven and drink hot tea. I seized this opportunity to make some summery lemon cookies. I used a recipe for "Princess Cookies" from Allrecipes (link) with only a little modification. I followed the recipe exactly for the cookies and then added a lemon glaze myself. 
























Here are some pictures of the process. First, the dough, which was very fluffy and a bit sticky (hence the chilling for 30 min).

I wasn't originally going to make a glaze, but the cookies tasted a bit too plain on their own. So I mixed up 1/2 cup of powdered sugar with the zest and juice of a small lemon to make the glaze. I'm not very good at pouring the glaze in a nice pretty pattern, so I just kind of swirled it around to attempt somewhat full coverage of the cookies. And in this weirdly colored picture, you can get a glimpse at the inside of the finished cookie, which was very cake-y and fluffy on the inside.
